Grape Variety: Nero d’Avola
Production area: the vineyards are located on the hillside of the Belice valley, in the heart of the Trapani province.
They are part of a “special” project with the focus to select the right place for the right varietal. This means, to grow the quality of the fruit thanks to the best conditions of the characteristics of the vineyard. Altitude: 300-400m above sea level.
Vinification: grapes are de-stemmed and softly crushed then a cold maceration on the skins for 3 days before the fermentation with selected yeasts at 22-23°C.
The skin contact with the juice is very important in order to have the best extraction of color and sweet tannins.
Ageing: partial aging in French oak barrels for 8 months.
Tasting Notes: brilliant red in color, with cherry and plum notes on the nose, it is well balanced with red berry fruits and a well-integrated oak character on the palate.
Food Pairings: to be matched with meats and roasted fish.
Serving Temperature: 18°C.
