Vinification: part of the grapes is dried following the procedure of “appassimento” for a short period of one month. The rest of the grapes are immediately crushed and fermented for about 15 days in stainless steel tanks.
Maturation: 10% of the wine is aged in French oak for one and half month. After this short ageing, the wine is aged with the rest of the mass in stainless steel tanks before the bottling.
Tasting Notes: intensive ruby red in color with violet reflections. Rich on the nose with notes of red fruit. Taste intensive, dry but soft tannins, with hint of cacao and red fruits.
Food Pairings: tasty red meats, very aged cheeses.
Serving Temperature: 16-18°C.
