The term symbiosis (from greek sun and bios, that means life together) indicates the relationship that develops between two individuals of different species, aimed at a mutual benefit or at least one of the partners, without the other will come to harm.
The project aims to grow a symbiotic viticulture and oenology in harmony with the environment, by reducing progressively in the vineyard and in the cellar all products of synthesis and/or potentially allergenic (no products of animal origin, GMOs and sulfur). The energy we use in the cellar comes exclusively from the sun. The whole process chain, including packaging, is aimed at reducing waste.

Grape Variety: Chardonnay; Symbiotic grapes without herbicides, using microbial consortia.
Vineyard of origin: San Lorenzo. The soil of the vineyard from which Simbiotico Franciacorta Brut is born is of alluvial origin and is characterized by deep, moderately clayey soils with good water retention.
Vinification: In absence of sulphur and any other additive and adjuvant potentially allergenic of animal or GMO origin
Refermentation and aging on the yeasts: In the bottle for at least 24 months with yeasts selected on the estate.
Disgorging: At least 30 months from the harvest.

Villa Crespia Simbiotico is a Franciacorta Brut whose acidity and freshness coming from lime scents perfectly blend with floral hints of rose and yeast.
