Vinification:
Soft pressing, clarification of the must and fermentation in temperature-controlled stainless steel tanks. Re-fermentation in autoclave using the Charmat method.
Tasting notes:
Pale lemon yellow with slight greenish highlights, fine and persistent perlage. Citrus and floral notes, green herbs and toasted bread. Fresh and lively, with a medium structure and persistence in the mouth

Ideal as an aperitif, appetizers and raw fish, shellfish, first and second courses based on fish.
