As early as the middle Ages, Pommard was thought of as the flower of Burgundy wines - the wine to which all others were compared. It is still one of the most famous red Burgundy, and surely the most powerful Cote de Beaune wine. Only Pinot Noir is grown on 320 ha in total including 27 Premiers Crus such as the famous Les Rugiens. Planted on east and southeast facing slopes.
 
The Wine:
Hand-harvested from around 20 years old vines. De-stemming, traditional fermentation in open vats with pigeage and pumping over. Aged in French oak barriques during 12 months in average. Soft filtration before bottling.

Tasting Notes:
Deep dark red with mauve highlights. Its aromas are redolent of blackberry and ripe plum with white pepper underlying notes. Often, wild and leather notes develop with age. It needs to be given time to open up and to display its firm but delicate structure, its fruit-filled mouth, and its chewy tannins which by then will be properly smoothed down.
 
Food Pairings:
With its dense and massive tannins, this bottle revels in furred or feathered game which will find in Pommard an invaluable collaborator. Good match with thick cut beefsteak, lamb, or stewed poultry. It is a natural partner for cheeses with well-developed flavors: Epoisses, Langres and also Comté.
 
Service Temperature:
Serve at 15-16°C. Best after 3 years in bottle. It requires being decanted.
