Meursault is certainly the most aristocratic white wine of Burgundy. With 370 ha including 21 Premiers Crus such as Charmes or Les Genevrieres, it is the largest white Village appellation of Cotes d’Or. The vineyard is surrounded by Puligny-Montrachet on the south and Volnay and Auxey-Duresses on the north. 
 
The Wine:
Hand-harvested. Soft pneumatic press and cold clarification. Aged in French oak barriques during 11 months. Traditional stirring of lees so as to give more fatness and complexity to the wine. “Les Hauts Bois” comes from a specific blend of top of the hill plots where the chalky rocks come through the soils. It gives more elegancy and minerality to the wine.

Tasting Notes:
Limpid green-gold color, leaning towards bronze as it ages. The bouquet is redolent of toasted almonds in ripe fruits (grape, citrus) and mineral settings. Butter and honey are also present and will develop with age. On the palate, it is rich and fat with appealing taste of hazelnut, well balanced with its freshness. It needs time to mature.
 
Food Pairings:
With its rich and buttery characteristics, this bottle revels naturally with noble and fine textured fish or white meats in butter or cream sauces. It will be at its best with grilled lobster or king prawns in sauce. It is also a good partner with refined and strong cheeses. Ageing potential of around 5 years. Best after 3 years in bottle.
