Fattoria Fibbiano is located in Tuscany, in the Council of Terricciola, Province of Pisa.
Terricciola, in the hills between Pisa and Volterra, is an area rich in history and legend. The soils are marine, full of corals, medium texture. Pliocene shells.
The farm lies on an entire hill. Most of the vineyards are in the south. 2.5 hectares were planted north deliberately to get fresher grapes in dry periods, very frequent in the last few years. All the varieties of red grapes are planted on the top of the hill, whilst the white grapes are planted at the bottom of the slope.
A stone in the basement of the building has carved the year of construction: 1707. In 1997 Giuseppe Cantoni bought the Fibbiano farm.
Total area: 20 hectares of vines (around 2.5 hectares have more than 100 years).
The company has always cultivated autochthonous grapevines like Sangiovese, Sangiovese Forte, Sangiovese Polveroso, Canaiolo, Ciliegiolo, Colorino for red wines, Vermentino & Colombana for white wines.

Wine Making: inside the tank the must is cooled down with iced CO2, in order to decrease the temperature in a very short time and create a barrier of CO2 to avoid the oxydation. After 24 hours the must is pressed and moved in a new fermentation tank with controlled temperature for approximately 30 days.
Finishing: 6 months in cement tanks and finally 6 months in bottle

Tasting Notes:
Light pale golden color with aromatic notes of fresh citrus and fragrance of star anise. The palate is soft, mineral with a crisp persistent taste and a good acidity.
